Carrot Cake: Low Carb/ Keto Friendly
Indulge your taste buds into this decadent dessert without all the guilt!
There is a YouTube influencer that I follow that I got this recipe from Kyle Flavell. She is native to Australia and moved to Italy since she fell in love with the country. At the time she aired her video on this cake making I was doing Keto so I substituted the sugar for Keto alternative and it came out wonderfully.
Recipe:
Cake Ingredients
250g (1 cup) brown sugar (Use Keto friendly Swerve)
1/2 cup olive oil
3 eggs
1 teaspoon vanilla bean extract
300g (1 1/4 cup) almond meal (can use almond flour)
1/2 teaspoon baking soda (bicarbonate of soda)
1 teaspoon baking powder
1 heaped teaspoon cinnamon
1 pinch salt
250g (1 cup) roughly grated carrots (can add up to 3 cups)
Frosting
500g (2 cups) mascarpone
1/4 cup icing sugar (Use Keto friendly Swerve)
1 1/2 cup cream (as much as necessary so spreadable)
1 teaspoon vanilla bean extract
Directions
Preheat oven to 350C and line a 8 inch round pan with baking paper (springform tin the best)
Grate carrots so on larger side (easier to do first since and have ready)
Mix sugar and oil in a bowl
Beat in eggs one at a time
Add vanilla
In another bowl, mix almond meal, baking powder, baking soda, salt and cinnamon
Combine dry ingredients with the wet batter and the carrots. Stir until combined
Pour into cake tin and cook in the oven for about 40 minutes or until golden brown and crisp and knife comes out clean
Mascarpone and cream when at room temperature add cream to mascarpone slowing and a bit at a time to avoid curdling. Stir in icing sugar and vanilla at same time. Mix until spreadable texture.
Once cake cooled. Halve the cake. Use a large knife to slice the cake and use the bottom of the spring form tin to slide in between the cut cake to carefully separate without breaking the cake.
Spread icing on the cake. Decorate how you wish.
